Eating Smarter Recipe: Good for You French Toast (with Homemade Syrup)

Although this recipe requires just a bit of prep work, especially if you make your own syrup), it’s work the effort. Yum!

Good for You French Toast (with Homemade Syrup) 

Ingredients:
1 slightly beaten egg
1 slightly beaten egg white
3/4 cup skim milk
1 teaspoon vanilla
8 slices French bread, 1/2 inch thick each
1/4 teaspoon finely shredded orange peel
2/3 cups orange juice
1 tablespoon honey
1 1/2 teaspoon cornstarch
1/8 teaspoon cinnamon

Instructions:
To make the French Toast, combine eggs, milk, and vanilla in a large bowl. Mix well. Dip bread in egg mixture, being sure to coat both sides. Using a non-stick frying pan or griddle, grill each side until golden brown. (Serves 2-4)

To make the syrup, put orange peel, orange juice, honey, cornstarch, and cinnamon in a saucepan. Cook over medium heat until mixture starts to thicken.  Continue cooking, stirring occasionally, for 2 more minutes. Serve warm syrup over French Toast (and skip the butter).

Serving Tip: Garnish with fresh fruit for an extra healthy splash of color!
